My family picks own our apples each year and we make applesauce! We always pick a variety and I use a mixture of all kinds. Some apples cook down more than others (MacIntosh, Jonagold, Gala and Empire) and some stay firmer (Granny Smith, Fuji, Mutsu, Red Delicious and Northern Spy) and I love to have both in my chunky homemade applesauce.
